3 c. sugar 2 egg whites
½ c. light corn syrup ¼ t. vanilla
2/3 c. water 1 c. chopped nuts, optional
¼ t. salt
Place sugar, syrup, and water in a 3 quart glass bowl. Microwave on High for 15 minutes. In a large bowl, add salt to egg whites and beat constantly until egg whites are stiff and form peaks. Slowly pour a thin stream of syrup into egg whites, beating constantly until mixture loses its shine and thickens. Stir in vanilla and nuts. Immediately drop by teaspoonful on wax paper. (Note: Work quickly and with a helper to get it on the wax paper fast or it will stiffen up and become grainy).
